Many people truly believe in the many positive effects maple syrup is said to have, but it’s not always easy to prove these claims. Nevertheless, the darker the syrup is, the better its reputation, since dark syrup contains more antioxidants. Antimicrobial properties, a low glycaemic index and diverse healing substances are all attributed to maple syrup.
What would pancakes be without the distinctive flavour of maple syrup? . The syrup is obtained from the tree in a very interesting way.
Native Indians discovered in a roundabout way that the maple tree produces a sweet sap. It is obtained in a way similar to resin or rubber, by cutting the tree bark, and removing the sap running down. Great care is taken to harvest just the right amount of sap, as otherwise the tree would stop growing.
Our sweet maple syrup has a very strong, intense taste and is an attractive amber colour. The syrup is pleasantly sweet, with a typical flavour reminiscent of caramel. The syrup is ideal for processing.
Origin and Production:
We source our organic Maple syrup from Canada, whose national flag depicts the maple leaf. The area, in which the trees grow are largely certified for organic farming. During harvesting, the tree sap is removed and thickened, resulting in a syrup (between 30 and 50 litres of sap produce 1 litre syrup).
Finally the syrup is carefully processed in hygienic conditions, ensuring high quality and the syrup undergoes further controls.
