Walnuts have the highest levels of omega 3 fatty acids (linoleic acids) of any nut and are a good source of minerals and vitamins, in particular vitamin E, A, the B vitamins, zinc, potassium, magnesium, iron and calcium [1 and 2].
It is a well-known fact that nature develops its full potential in wild growing nuts in particular and that they can provide optimal supplies of nutrients to the human body.
Research has shown that the vital substances contained in walnuts reduce blood cholesterol levels, stabilise blood sugar values, strengthen the vessels, lower the risk of contracting stomach or prostate cancer and heart attacks, inhibit inflammatory reactions, strengthen the heart muscle and aid the liver. Walnuts are also said to positively influence type 2 diabetes, and to protect the body in stressful situations .
Walnuts are therefore an excellent choice for a balanced healthy diet and should be consumed daily.
Our organic Fairtrade walnut pieces are from genuinely wild growing trees. The pieces are checked and sorted several times. They are ideal for grinding or using in various types of pastry, nut bars etc. The colours very between delicate and rich shades of brown. The pieces are of different sizes and the flavour is the same as that of our whole walnuts.
Origin and Production:
We source our organic Fairtrade walnuts exclusively from Uzbekistan. Large parts of the region are certified for organic and FAIRTRADE products, and are cultivated by the FAIRTRADE farmers living there. The farmers are part of a large Fairtrade community made up of 3 groups, Dustkul Bogi, Turkiston Gulba and Turob Bobo.
1,000 farmers and their families belong to the community. By working with Fairtrade, the farmers can provide their families with a secure income and offer their children new opportunities.
After being carefully harvested, the walnuts are cracked open. The walnut pieces are produced naturally in this way. The drying process is very eco-friendly, using a solar drying method that has a minimal impact on the product.
The walnuts are pressure treated and laser cleaned in Austria. During the pressure process, the combination of pressure and time ensures that the product is completely free of pests. When undergoing several rounds of cleansing in the laser cleaning facility afterwards, the organic walnuts are checked individually.

Why you should germinate our nuts!
Inhibits and reduces levels of phytic acids
Phytic acids occur in natural foods, inhibiting digestion of minerals. Reducing amounts of phytic acids allows the minerals to be absorbed by the body, providing it with the associated benefits .
- Inhibits and reduces tannins
The plant deploys tannins for its own protection. When excessive amounts of tannins are digested, flatulence (digestive problems) may result and consumption of iron and calcium (or minerals) may be reduced .
- neutralises enzyme inhibitors
The human body needs certain reactions to take place in order to function efficiently, and certain enzymes are needed for these reactions. If the enzymes are functionally inhibited, the body can’t work optimally. That’s why it’s important to reduce inhibition to a minimum.

The germination processes cause the plant to start budding again. Many important vital substances are activated and mobilised, for example vitamins and enzymes. This makes germinated nuts considerably more nutritious than nuts that are not germinated.
How to germinate the nuts:
Good results are obtained when the nuts are placed into lukewarm water in the evening and left overnight. The nuts will have germinated by the next morning. If you have more nuts than you need in the morning, store them in the refrigerator without the water. If you want to keep them for a longer period, you can dry the nuts on a dry surface or in the oven.
Depending on the foodstuff used, germination periods are generally around 7 to 24 hours.
